CORE DEFINITION
Imagine an infinite Chinese restaurant. The first customer sits at the first table. Subsequent customers either sit at an existing table with a probability proportional to the number of people at that table, or start a new table.

A rich-get-richer clustering model. It simulates the birth of new things (new tables) and the monopoly of old things (large tables). It tells us that to survive in a mature market (where large tables abound), you either need strong appeal to open a new table, or you can only become an appendage of a large table.
Anchor fast decisions
In probabilistic models, a class of random distributions (constructive definition of the Dirichlet process) is constructed using the sampling scheme of 'tasting the menu and reselecting', named after the Chinese restaurant metaphor.
