Thixotropy is a property of certain non-Newtonian fluids that become fluid when stirred, and gradually thicken and gel when stirring stops, rather than immediately returning to their pre-stirred state. This process can be repeated reversibly. Thixotropy is also a phenomenon of reversible transformation of fluid structure, namely the gel-sol-gel transition, which is caused by temperature, pH, or other influencing factors.
